    I got this recipe from a friend in our Sunday School class from Paris. It is SO good!!


    List of Ingredients


    • 1/2 lb. browned hamburger (sometimes 1 lb. can be used)
    • 4 cups diced potatoes
    • 3/4 cup shredded carrots
    • 3/4 cup diced celery
    • 3/4 cup chopped onions
    • 5 Tbsp. butter
    • 1/4 cup flour
    • 8 oz. velveeta cheese (can use more than this to make it more cheesy)
    • 1 1/2 cup milk
    • 1 tsp. dried parsley flakes
    • 3/4 tsp. salt
    • 1/4 tsp. pepper
    • 3 cups chicken broth
    • 1/4 cup sour cream


    Instructions


    1. Saute onion, carrots, celery, basil, and parsley in 1 Tbsp. butter for about 10 minutes.
    2. Add broth, potatoes, and hamburger.
    3. Bring to a boil.
    4. Reduce heat, cover, and simmer for 10-12 minutes or until potatoes are tender.
    5. Meanwhile, in a small skillet, melt remaining butter (4 Tbsp.).
    6. Add flour. Cook and stir for 3-5 minutes or until bubbly.
    7. Add to soup. Bring to a boil.
    8. Cook and stir until cheese melts.
    9. Remove from heat and stir in sour cream.
