    List of Ingredients


    • 2/3 cup sliced carrots
    • 1/2 cup diced onion
    • 2 garlic cloves (I just use garlic salt)
    • 3 cans fat free chicken broth
    • 1 1/2 cups diced green cabbage (I don't use this)
    • 1 can green beans
    • 1 Tbsp. tomato paste (I use 2 )
    • 1/2 tsp. basil
    • 1/4 tsp. oregano
    • 1/4 tsp. salt
    • 1/2 cup diced zucchini
    • 1/2 can Rotel


    Instructions


    1. In large pan sprayed with cooking spray, saute carrot, onion, and garlic over low heat until onions are softened.
    2. Add all other ingredients except zucchini.
    3. Bring to a boil.
    4. Lower heat and simmer covered for about 15 minutes (until carrots are soft).
    5. Add zucchini and heat 3-4 minutes.
