Cottage Potatoes

List of Ingredients
- 5 lg. white potatoes, cooked and diced
- 2 cups (8 oz.) shredded cheddar cheese
- 1 med. onion chopped
- 1 jar (2 oz.) chopped pimientos, drained
- 1 tsp. minced parsley
- 1/2 cup chopped bell pepper
- 1 slice bread (crumbs)
- 1 tsp. salt
- 1/4 cup margarine, melted
- 1/2 cup milk
- 1/2 cup cornflakes, crushed
Instructions
- Combine first 8 ingredients in 9 X 9 baking pan.
- Mix margarine and milk.
- Pour over potato mixture.
- Sprinkle with cornflakes.
- Bake for 30 minutes at 400 degrees.
