I found this recipe at www.shelsgarden.com. This is great with fresh purple-hull peas.
List of Ingredients
- 1 qt. fresh shelled purple-hull, crowder, or lady peas
- 1 whole onion
- salt and pepper to taste
- 1 tsp. sugar
- 3-4 slices bacon, salt pork, or smoked ham
Instructions
- Clean and rinse peas thoroughly.
- In a large saucepan, combine all ingredients and add enough water to just cover.
- Bring to a boil.
- Reduce heat and simmer for about 2 hours.
- You may let this sit, covered, until serving time.
