    List of Ingredients


    • 4 slices of bread
    • 1/4 C. water
    • 2 eggs
    • 1 lb. ground beef
    • 1/4 C. Parmesan cheese
    • 2 Tbsp. parsley
    • 1 tsp. salt
    • 1 tsp. Italian seasoning


    Instructions


    1. Soak bread slices in water 2 to 3 minutes.
    2. Add eggs and mix well.
    3. Mix with ground beef, Parmesan, and seasonings.
    4. With wet hands form meat mixture into small balls (about 24).
    5. Brown slowly in 2 Tbsp. hot oil.
    6. Add meatballs to sauce, simmer loosely covered for 30 minutes.
    7. Or cook in pressure cooker 10 minutes with 1 cup water.
    8. Makes 8 servings.


    Final Comments


    For 1 tsp. Italian Seasoning can substitute 1/4 tsp. each basil, oregano, thyme and anise.
