    Double Chocolate Zucchini Cookies

    List of Ingredients


    • 2/3 C mini bittersweet chocolate chips
    • 2 C flour
    • 1/4 C cocoa
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/2 C butter
    • 1/4 C sugar
    • 1/2 C brown sugar
    • 1 egg
    • 1 tsp vanilla
    • 1 C shredded zucchini
    • Glaze:
    • 1 Tbsp melted butter
    • 1/4 C Powdered sugar
    • Milk
    • Vanilla


    Instructions


    1. Whisk together flour, cocoa, baking soda, and salt.

    2. Cream butter and sugars until fluffy - add egg and vanilla, cream again.

    3. Mix in zucchini.

    4. Add dry ingredients, mix well by hand.

    5. Fold in chocolate chips.

    6. Put 2 Tbsp (1/8 C) - 2 inches apart on a cookie sheet.

    7. Bake for 12 min @ 325 deg.

    8. For Glaze: Melt 1 Tbsp. butter. Let cool then add powdered sugar.

    9. Add drops of milk until smooth. Can also add a few drops of vanilla.
