    Zucchini Pineapple Bread

    List of Ingredients


    • 3 eggs
    • 1 C. oil
    • 2 C. sugar
    • 3 tsp. vanilla
    • 2 C. grated zucchini
    • 3 C. flour
    • 1 tsp. baking powder
    • 1 tsp. baking soda
    • 1 tsp. salt
    • 3 tsp. cinnamon
    • 1 8oz. can crushed pineapple, drained
    • 1 C. chopped walnuts


    Instructions


    1. Beat eggs until fluffy. Add oil, sugar, vanilla and zucchini. Mix well.
    2. Add dry ingredients and mix well.
    3. Add pineapple and nuts. Blend.
    4. Bake at 325 deg. in 2 greased and floured bread pans for 1 hour or 1 greased and floured Bundt pan for 1 hour and 20 min.
