    Meatballs:
    1 pound ground turkey
    1 cup cooked brown rice
    1 - 8 ounce can crushed pineapple in juice, drained
    1/2 cup green onions
    1 tablespoon light soy sauce
    1 teaspoon ginger

    Sauce:
    3/4 cup reduced sodium, low fat chicken broth
    1/3 cup chili sauce
    3 tablespoons rice vinegar
    2 tablespoons brown sugar
    2 teaspoons cornstarch
    1/2 teaspoon ground ginger

    Recipe



    Combine the meatball ingredients in a medium bowl, and mix thoroughly. Line a baking sheet with foil (This makes for easier cleanup). Place cooking racks in foil lined baking sheet, Shape meatballs, and place on the racks. Bake at 350 degrees F. for about 25 minutes or until thoroughly cooked. Transfer the meatballs to serving dish. Cover with foil to keep warm.

    Combine the sauce ingredients in a small saucepan, and stir until the cornstarch is dissolved. Place over medium heat, and cook and stir until the mixture comes to a boil. Reduce the heat to low, and cook and stir for another minute, or until the mixture thickens slightly. Pour the sauce over the meatballs. Gently toss to coat meatballs with sauce. Serve warm with toothpicks for grabbing.

    Hint: You can keep warm in chafing dish or on a warmer.
