    1/4 cup shortening
    1 1/2 cup sugar
    2 eggs
    1 1/2 teaspoons vanilla extract
    3 cups all-purpose flour
    2 teaspoons baking soda
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 1/2 cups orange juice
    1 1/2 cups chopped dates
    1/2 cup chopped walnuts

    Recipe



    In mixing bowl, cream the shortening and sugar. Add the eggs and vanilla; beat until fluffly. Combine the dry ingredients; add alternately to the creamed mixture with orange juice. Blend well. Fold in the dates and walnuts. Pour into two 8x4x2 loaf pans coated with nonstick cooking spray.
    Bake at 350 for 45-50 minutes or until a toothpick insterted near the center comes out clean. Cool in pans 10 minutes before removing to wire rack. yields 2 loafs
    (14 slices each)
