    Vegetable Beef Casserole

    List of Ingredients

    16 oz lean ground beef
    1 pint sliced baby portobello mushroom(s) (optional)
    10 1/2 oz Fat-Free Cream Of Mushroom Soup
    1/4 cup onion(s)
    1 (14 1/2oz) can Green Beans, drained
    11 oz can yellow corn, drained or 1 1/2 cup frozen corn
    1/2 tsp table salt
    1/4 tsp black pepper
    1 cup instant brown rice
    1 cup water
    1/2 teaspoon soy sauce
    1 oz fat-free cheddar cheese or one of you favorite strong cheese

    Recipe

    Brown ground beef, add chopped onion, and sliced mushrooms. Cook until mushrooms and onions tenders. Pour into colander, rinse with warm water to remove fat. Pour in canned green bean and corn to drain. Pour into casserole dish. Add remaining ingredients, except cheese. Top with cheese. Bake 350 40-45 minutes. Remove from oven, cover, let stand 15 minutes. Serve.
