1/2 cup chicken broth
1/4 cup hoisin sauce
1 tablespoon reduced-sodium soy sauce
2 teaspoons cornstarch
1 tablespoon Asian (dark) sesame oil
1 onion, chopped
1 pound asparagus, trimmed and cut on a diagonal into 1-in pieces
1 (10-oz) container white mushrooms, sliced
1 red bell pepper, seeded and cut into 1/2-in pieces
1 (8-oz) can sliced water chestnuts, drained
3 scallions, chopped
2 cups cooked brown rice
Recipe
Combine the broth, hoisin sauce, soy sauce and cornstarch in a small bowl; set aside.
Heat a nonstick wok or a large deep skillet over medium-high heat until a drop of water sizzles, swirl in the oil, then add onion. Stir-fry 1 minute. Add the asparagus, mushrooms, bell pepper and water chestnuts. Stir-fry until crips-tender, about 4 minutes. Add the broth mixture and cook, stirring comstantly, until the mixture boils and thickens, about 2 minutes. Remove from heat and stir in the scallions. Serve over rice.
