Grilled Potatoes with Lemon & Thyme

    Source of Recipe

    Recipe Introduction

    servings 4
    points 3

    List of Ingredients

1-1/2 pound(s) small (1-1/2 inches in diameter) new potatoes, halved
4 very thin slices of lemon
    4 sprigs fresh thyme
    1-1/2 Tbsp olive oil
    1 sheet (18-inch-square) heavy-duty aluminum foil
1 Tbsp fresh lemon juice or to taste

    Recipe

Toss potatoes, lemon, and thyme in a bowl with oil until well coated. Sprinkle with salt and pepper to taste.

Arrange potatoes on aluminum foil in a single layer in the shape of a square. Bring up sides of foil and seal edges by rolling them together to make an airtight, flat square packet.

Preheat grill. Place foil packet on rack over moderate heat, uncovered, shaking packet and turning occasionally, until potatoes are tender and golden brown, about 20 minutes (let potatoes stand wrapped in foil 5 minutes, then carefully open packet to check doneness, since hot steam will escape). Transfer potatoes to a serving bowl, toss with lemon juice and salt and pepper to taste.
