    Double Chocolate Muffins

    Recipe Introduction

    12 muffins 3.5 per muffin

    List of Ingredients

    1/2 cup orange juice*
    1/3 cup water
    3 tablepoon oil
    1 teaspoon vinegar
    1 teaspoon vanilla
    1 tablespoon lite chocolate ice cream topping
    1 1/2 cup flour
    1.2 cup sugar
    1.4 cup cocoa
    1 teaspoon baking soda
    1.4 teaspoon salt
    1/3 cup mini semisweet choc. chips
    powdered sugar

    Recipe

    Preheat oven to 375 deg. LIne muffin pan with paper liners.

    Whisk wet ingredients.

    In a separate bowl, mix dry ingredients.

    Stir dry into wet, just 'til all ingredients are moist. Fold in chips.

    Fill muffin cups 3/4 full.

    Bake for 12 minutes, or until a toothpick insterted in the middle comes out clean.

    Remove muffin tray and cool on a rack for sevearl minutes. Sprinkl the tops with powdered sugar before serving the muffins warm.



    Makes 12 3.5 point muffins
