    1 tablespoon vegetable oil
    1 medium onion chopped
    1 can (19 oz) tomatoes
    1 can (14 oz) red beans
    1 can (12 oz) kernel corn
    1 tablespoon chili powder
    3/4 cup cornmeal
    2 eggs
    1 cup 2% milk
    1 1/2 cup grated cheese (strong cheddar, swiss or gruyere cheese, mozzarella or a mix)

    In a large skillet, heat the oil on medium-high. Cook the chopped onion until transparency. Cut the tomatoes into pieces and add to the onion with the red beans, the corn and the chili powder. Cook, uncovered, at low heat for an hour or until the mixture is slightly thickened. Stir once in a while. Pour the mixture into a 13 x 9 in pan and sprinkle the cornmeal all over it.

    In a bowl, beat the eggs with the milk, pour over the pie on the cornmeal. Sprinkle with cheese. Bake in the oven at 350 deg.F for 50 to 55 minutes. Cut into squares. Serve.
