    Potato Chips - Microwave

    List of Ingredients

    2 (10-oz)raw weight, potatoes
    cooking spray
    your choice of spices, BBQ spice, Mrs Dash, etc.
    parchment paper or wax paper

    Recipe

    If potatoes are old, peel and slice thin, 1/16" in thickness, slicing across the potato.
    If the potatoes are new or good skins, DO NOT PEEL, just scrub well, then slice them 1/16" in thickness, slicing across the potato.

    Thinly slice potatoes using either a mandolin, or a regular vegetable peeler.

    Spray a sheet of parchment paper or wax paper lightly with cooking spray, and lay potatoes out in a single layer.

    Sprinkle with BBQ spice, and place in the microwave. Microwave on high, 5-7 minutes, until chips start to brown. (note): if you use any kind of cheeses, put cheese on after they come out of the microwave.

    Remove from the microwave, and cool for a few seconds.

    Note: a 10-oz raw potato will yield about 10 chips

    Note: cooking times may vary depending on the wattage of your microwave.


    Spices;

    Barbecued Spice Recipe

    makes 5 teaspoons

    2 teaspoons dried parsley
    2 teaspoons paprika
    1/2 teaspoon hickory smoke salt
    1/2 teaspoon onion powder
    1/4 teaspoon garlic powder

    Chili-Parmesan


    3/4 cup grated Parmesan cheese
    1 1/2 tsp sugar
    1 tsp chili powder
    1/2 tsp cayenne pepper
    1/2 tsp table salt
    12 cups light microwave-popped popcorn

    Combine cheese, sugar, chili powder, pepper and salt in a small bowl; Yields about 1 1/2 cups per serving.

    Parmesan-Garlic

    2 1/2 quarts popped popcorn
    1/4 cup grated Parmesan cheese
    1 teaspoon garlic powder
    1 teaspoon dried parsley flakes
    1/2 teaspoon dill weed

    Place popcorn in a larger bowl and mist with nonstick cooking spray. In a small bowl, combine Parmesan cheese, garlic powder, parsley and dill.

    2 1/2 quarts serving size

    **************

    Sweet and Spicy

    1 tablespoon sugar splenda
    1 teaspoon chili powder
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt, optional
    dash cayenne pepper (alot goes along way)


    Place sugar, chili powder, cinnamon, salt and cayenne pepper in a resealable plastic bag or other 2-quart airtight container.

    ************************

    Parmesan cheese,
    sprinkle cheese over chips, while still warm,
    Do not sprinkle cheese on the potato chips before cooking,
    (it will burn)

    Note:
    when using spices, alittle goes along way, you don't need alot on them
