    1/2 cup Dijon mustard
    1 tablespoon finely chopped green onion
    2 cups fresh bread crumbs
    1/4 cup fresh minced parsley
    1 1/2 pounds boneless, skinless chicken breasts, cut into 3/4 inch chunks

    Recipe



    In a bowl combine mustard and onion. In another bowl, combine bread crumbs and parsley. Toss chicken in mustard mixture. Coat evenly with crumb mixture. Line a baking sheet with foil and coat foil with cooking spray. Thread chicken on to metal or soaked wooden skewers, leaving a small space between chunks. Place on prepared baking sheet and bake, uncovered, at 450F for 6 to 8 minutes or till juices run clear.

    One serving equals 222 calories, 73 mg cholesterol, 12 gm carbohydrate, 30 gm protein, 6 gm fat.
    Diabetic exchange equals 4 very lean meat, 1 starch
