Candied Sweet Potatoes

List of Ingredients
4 pounds sweet potatoes, quartered (approx 5 large potatoes)
1 cup reduced-fat, soft tub margarine
3/4 cup brown sugar
1/4 Splenda
1 cup mini marshmallows
ground cinnamon to taste
ground nutmeg to tasteRecipe
Preheat oven to 400 degrees
Boil a large pot of water, add potatoes and boil until slightly underdone, approximately 15 minutes. Drain and peel.
In a large saucepan over medium heat, combine margarine, brown sugar, Splenda, cinnamon and nutmeg. Cook stirring until melted.
In a large mixing bowl, add mixture and ½ of the potatoes and mash together. Break the remaining pieces of potatoes into bite size pieces and combine with mashed mixture. Transfer to baking dish sprayed with non-stick cooking spray.
Bake in preheated oven for 15 minutes. Remove from oven and cover with marshmallows. Return to oven and bake until marshmallows are golden brown.
