2 cups grated corn kernels (12 ears) or 2 cups frozen corn
1 Tbs all-purpose flour
1 Tbs sugar (or sugar substitute)
1 tsp salt
1 tsp pepper
1 cup egg substitute
1 cup evaporated skim milk
1 Tbs light margarine Recipe
Grate corn from ears into large bowl. Stir in flour, sugar, salt, and pepper. Heat oven to 325 degrees F. In separate bowl, beat egg substitute and milk for 3 minutes and then add to corn mixture. Pour the mixture into a nonstick loaf pan and place in hot water bath. Bake 30 minutes or until firm to touch.
