    Cauliflower with Bacon and Mushrooms

    List of Ingredients


    • 4 slices bacon
    • 2T butter
    • small head cauliflower cut into bite size pieces
    • 8 oz mushrooms, sliced
    • 1/2 red onion, diced into small pieces
    • 1/2 cup chopped fresh parsley
    • salt and pepper to tasted


    Instructions


    1. Cut bacon into small crosswise strips, then cook in large frying pan until crispy. Drain some of the grease but don't wipe out the pan. Add butter and heat until melted then add cauliflower and mushrooms and cook over very high heat stirring constantly for about 5 minutes. Add onions and cook about 2 more minutes or until cauliflower seems nearly done. Add bacon and parsley and cook a few more minutes. Add 1/4 cup water and scrape pan to get bits off bottom of pan. Cook until water evaporates. Season with salt and pepper. Serve Hot
