    This is a sweet version of the mirliton. It is served chilled and makes a great dessert.

    List of Ingredients




    4 to 6 mirlatons
    4 tablespoons cornstarch
    1 1/3 cup milk
    1 cinnamon stick
    1/2 cup raisins
    1/2 piece of lemon peel
    1 1/3 cup sugar
    2 egg yolks
    1 teaspoon vanilla
    1 package sliced almonds
    bread crumbs

    Cut mirlitons in half. Place in pan with water to cover and 2 teaspoons salt. Cook for 45 minutes on medium fire or until mirlitons are soft. Cool slightly. Scoop out inside of mirliton leaving the shell intact. Discard seed and save the meat.

    Put meat in blender and mash. Min milk and cornstarch until cornstarch dissolves. Put milk and cornstarch mixture in small pan with meat, cinnamon stick, lemon peel, sugar and egg yolks. Cook on low fire stirring constantly. Cook until mixture becomes thick like pudding. This process takes a while so be patient. Take off heat and add raisins and vanilla.

    Heat oven to 400 degrees. Stuff shells with filling and cover with bread crumbs. Cook for 15 minutes until almonds get brown or if almonds are not used, until bread crumbs are toasted.
