    • 1 (15oz) can black eyed peas, drained
    • 1/4c. thinly diced green onion
    • 1/4c. finely chopped red sweet pepper
    • 2 cloves garlic, minced
    • 2T. oil
    • 1 or 2 fresh jalapeno peppers, seeded & chopped
    • 1/4t. pepper
    • dash salt


    Instructions


    1. In a bowl combine peas, green onion, sweet pepper, garlic, oil, vinegar, jalapeno, black pepper & salt.
    2. Cover and chill overnight.
    3. To serve, transfer to serivng dish. Serve with crackers or tortilla chips.
    4. Cover leftovers & chill for up to 4 days.
