- 1-1lb. pkg. hash browns
- 1/4 lb. bacon
- 1c. chopped onion
- 2T. chopped chives
- 6 eggs
- 1/2t. salt
- 1/4t. pepper
Instructions
- Fry bacon in large cast iron skillet. Add potatoes, onions, and chives.
- Cook for 4 minutes. Stir in eggs, beaten with salt and pepper.
- Cover and cook for 5 minutes more.
- Loosen gently with spatula; cut into wedges and serve.
