    List of Ingredients


    • 1-1lb. pkg. hash browns
    • 1/4 lb. bacon
    • 1c. chopped onion
    • 2T. chopped chives
    • 6 eggs
    • 1/2t. salt
    • 1/4t. pepper


    Instructions


    1. Fry bacon in large cast iron skillet. Add potatoes, onions, and chives.
    2. Cook for 4 minutes. Stir in eggs, beaten with salt and pepper.
    3. Cover and cook for 5 minutes more.
    4. Loosen gently with spatula; cut into wedges and serve.
