Scrambled Potatoes

- 1 lb. bacon, cut into small pieces
- 3 lb.peeled and shredded potaotes
- 1 lb. shredded Cheddar cheese
- 12 eggs
Instructions
- Fry bacon pieces until brown and a little bit crispy. Set aside.
- Cook and stir potaotes in bacon drippings until tender.
- In a large bowl, whisk eggs and salt and pepper. Add eggs to potatoes.
- Reduce heat to low. Cover and simmer 10 minutes.
- Sprinkle cheese and bacon pieces on top of potatoes.
- Let cheese melt. Serve.
- Great served with ham.
