    List of Ingredients


    • 1 lb. bacon, cut into small pieces
    • 3 lb.peeled and shredded potaotes
    • 1 lb. shredded Cheddar cheese
    • 12 eggs


    Instructions


    1. Fry bacon pieces until brown and a little bit crispy. Set aside.
    2. Cook and stir potaotes in bacon drippings until tender.
    3. In a large bowl, whisk eggs and salt and pepper. Add eggs to potatoes.
    4. Reduce heat to low. Cover and simmer 10 minutes.
    5. Sprinkle cheese and bacon pieces on top of potatoes.
    6. Let cheese melt. Serve.
    7. Great served with ham.
