    Company Steak With Mushroom-onion Toppin

    1 tablespoon vegetable oil
    2 cloves garlic, minced
    freshly ground pepper, to taste
    4 beef fillets, about 6 oz. ea.
    salt to taste

    1/4 cup butter or margarine
    1 yellow onion, sliced and separated into rings
    4 green onions, Including some tender green tops, sliced
    1/2 pound fresh mushrooms, sliced
    3 tablespoons chopped fresh parsley
    1 teaspoon Worcestershire sauce
    1 tablespoon red wine, Optional
    1 teaspoon soy sauce
    salt and freshly ground pepper to taste

    Preheat broiler. In a small bowl stir together oil, garlic, and
    pepper. Brush mixture on both sides of fillets. Place fillets on
    broiler pan. Broil, turning once, 5 to 6 minutes on each side for
    medium-rare. Transfer to warmed platter or individual plates and
    season with salt. Top with Mushroom-Onion Topping and serve
    immediately.

    For Mushroom-Onion Topping: In a skillet, over medium-low heat,
    melt butter. Add onions and saute stirring frequently, 3 minutes.
    Add mushrooms and parsley and saute until vegetables are tender,
    about 5 minutes longer. Add Worcestershire sauce, wine, soy sauce,
    salt, and pepper and saute until ingredients are blended, 2 minutes
    longer. Serves 4.
