    Mexican Orange Candy

    List of Ingredients


    • 1c. sugar
    • 1/4c. boiling water
    • 2c. sugar
    • pinch salt
    • 1c. evaporated milk
    • 1t. grated orange rind
    • 1c. chopped nuts


    Instructions


    1. Caramelize 1c. sugar to a rich amber color; add boiling water and boil, stirring occasionally until caramel is entirely dissolved.
    2. Turn into 3 qt. saucepan, add next 3 ingredients and cook to soft ball stage.
    3. Just before candy is done, add orange rind. Remove from heat and place in pan of cold water and cool.
    4. Beat until candy begins to stiffen; then stir in nuts and drop from teaspoon onto buttered waxed paper.
    5. Makes: 1 3/4 lb.
