    Chicken Salsa with a Cheese and Oatmeal

    4 whole chicken legs
    1 Tbsp olive oil
    1 onion, chopped
    1 1/2 cups chunky salsa mix
    2 cups rolled oats
    2 cups grated tasty cheese

    Discard the skin from the chicken and divide each leg in two at
    the joint. Heat the oil in a heavy frying pan and saute the chicken
    each side, until golden. Preheat the oven to 180 C. Place the
    chicken in a wide, shallow casserole.

    Saute the onion in the frying pan, until soft. Add the salsa mix,
    heat through briefly, then pour over the chicken. Cover and cook
    for 45 minutes. Remove the cover from the casserole. Combine the
    rolled oats and cheese and sprinkle evenly over the chicken and
    salsa. Return to the oven and continue cooking for 30 minutes.
