    MIXED BEAN CASSEROLE with Garlic Bread T

    1 teaspoon olive oil
    1 large onion, chopped
    2 cloves garlic, sliced finely
    1 large carrot, grated coarsely
    1 celery stick, sliced finely
    1 chicken flavoured vegetarian stock cube
    1/2 teaspoon mixed herbs
    440 gm can 3 Bean Mix, drained (other canned beans can be used)
    1 can chopped tomatoes
    1 tablespoon of Leggo's Sundried Tomato Pesto

    Place all ingredients in a medium sized saucepan, bring to the boil
    and simmer gently with lid on pan, until vegies are tender (about
    10 minutes), stir occasionally.

    Transfer to a rectangular or square flat casserole dish and top
    with garlic bread (see recipe below).


    GARLIC BREAD TOPPING

    3-4 slices wholemeal bread (toast thickness)
    1 1/2 - 2 tblspns of margarine
    1 clove garlic, crushed or very finely chopped
    1 tblspn finely chopped parsley

    Stir all ingredients together and spread generously on the bread.
    Cut bread into quarters and arrange, spread side up, to cover the
    top of the casserole mix. Bake in a moderate over 180\xad\xb0C
    for about 15 minutes until bread is crisp and golden. Serve
    immediately with crisp salad.
