    1 jar apricot jam
    1 bottle Russian dressing (Catalina or French can be used)
    1 packet dry onion soup mix
    2-3 lb chicken thighs

    Combine first three ingredients. Mix in chicken. Place in crockpot
    and cook on low for 6 to 8 hours or high for 3 to 5 hours. Serve
    over rice.

    Can be frozen once it has cooked; defrosts well in the microwave.
