Mexican Beans & Rice w/Spicy Meatballs

- 1 lb. ground beef
- 2 pkg. taco seasoning mix
- 1/2c. cilantro or parsley
- 1/2c. plain bread crumbs
- 1/3c. finely chopped carrots
- 3 1/2c. water
- 1 can diced chilies
- 6 garlic cloves, minced
- 1 red bell pepper, diced
- 2c. converted rice (white)
- 1 can kidney beans, drained
Instructions
- To make meatballs, in a medium bowl, combine ground beef, 1/2 pkg. taco seasoning mix, cilantro, bread crumbs, carrots and 1/2c. of the water. Mix well.
- Roll in 24 balls. For the beans and rice in slow cooker, mix together remaining 3c. water with remaining taco seasoning, green chilies, garlic, bell pepper and rice.
- Gently push meatballs down into rice mixture. Cook on low 4 hours or until rice is just tender and meatballs are cooked through.
- Gently stir in the beans and cook 30 mins. longer.
