    Zesty Slow-Cooker Italian Pot Roast

    List of Ingredients


    • 4 med. potatoes, quartered
    • 2c. baby carrots
    • 1 stalk celery, cut into 1 inch pieces
    • 2 1/2 lb. boneless beef chuck roast
    • 1/2t. pepper
    • 1 can Tomato w/ Roasted Garlic & Herbs soup
    • 1/2c. water


    Instructions


    1. Place potatoes, carrots, and celery in 3 1/2 qt. slow cooker.
    2. Season roast with pepper and place on top. Mix soup and water. Pour over all.
    3. Cover and cook on low 10-12 hrs.
    4. Serves: 4-6


    Final Comments


    For a thicker gravy, mix 1/4c. flour with 1/2c. water. Remove roast and keep warm. Add flour mixture to slow cooker. Turn heat to high. Cook until mixture boils and thickens, about 10 mins.
