Basic Apple Pie

7 Golden Delicious apples, pared
1/4 cup sugar
2 Tbsp flour
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp salt
1/8 tsp ground mace or cardamom
1 tsp vanilla
pastry for two crust 9" pie
2 Tbsp butter
cream
Core and thinly slice apples to equal 7 cups. Combine dry ingredients.
Stir in apples and vanilla; place in pastry-lined 9" pie plate.
Dot with butter; adjust top crust. Seal and flute edges; cut vents
and brush with cream. Bake at 425 degrees F. 50 to 60 minutes or
until apples are tender.
