    Cajun Cake

    50 friends

    2 C All Purpose Flour
    1 1/2 C Sugar
    1 1/2 teas. Baking Soda
    Pinch Salt
    2 Eggs
    1 Large Can Crushed Pineapple


    Mix the cake ingredients together.
    Preheat oven to 350 degrees F.
    Bake in a 9x13 inch pan for 25 min or until pick inserted in center comes out clean.
    Cool for 10 minutes on wire rack before icing.

    ICING:
    1 C Sugar
    1 C Pecans
    1 Stick Margarine
    1 C Coconut
    1 Small Can Pet Evaporated Milk


    ICING:
    Combine sugar, margarine and Pet milk. Boil for 5 minutes.
    Remove from heat and stir in pecans and coconut.
    Pour over cake.
    Refrigerate.
