    Coconut Custard Pie

    4 slightly beaten eggs
    1/2 cup sugar
    1/4 tsp. salt
    1/2 tsp. vanilla
    2 1/2 cups milk, scalded
    1/2 cup flaked coconut
    1 9-inch unbaked pastry shell

    Blend eggs, sugar, salt, and vanilla. Gradually stir in scalded
    milk. Pour into pastry shell. Sprinkle with coconut.

    Bake at 350F for 35 to 40 minutes (until knife inserted halfway
    between center and edge comes out clean. Cool on rack and then
    chill.
