    Maple Walnut Pie

    4 large eggs
    3/4 C real maple syrup
    2T lemon juice
    1 1/2 t vanilla
    1/4 t salt
    2 C chopped walnuts
    1 unbaked 9-in. pie crust

    Preheat oven to 375 degrees. Beat together first 5 ingredients
    until light and frothy. Spread the chopped walnuts in the unbaked
    crust. Pour in the egg/maple batter. Bake for 30-35 minutes or
    until solid in the center. (Be careful not to underbake or the
    filling will be runny.) Remove from oven and allow to cool for at
    least 30 minutes before serving.
