    Pumpkin Pie from Scratch

    1 uncooked pastry case, plain or sweet
    1 1/2 cups cooked pumpkin (mashed)
    1 cup (250 ml/ 8 fl oz) milk
    2 eggs
    60g (2 oz) brown sugar or more to taste
    1 tsp ground cinnamon
    1/2 tsp ground ginger
    1/2 tsp ground nutmeg

    Preheat oven to 200 C (400 F) Make pastry case as directed.

    Combine all filling ingredients. Beat well until light. Spoon into
    pastry case.

    Bake for 40 to 45 minutes Test by sliding a knife blade into center
    of pie, if cooked, the blade will come out clean, however, this
    filling does have a soft texture.
