    Tapicoa Pudding Banana Creme Pie

    1/3 cup medium or large pearl tapioca
    1 cup cold water
    2 cups milk
    1/3 cup sugar
    1/8 tsp salt
    1/4 tsp vanilla
    3-4 ripe bananas
    1 prepared pie crust

    Soak tapioca in cold water at least 3 hours or overnight. Do not
    drain. Transfer to a large, heavy saucepan, add remaining ingredients
    except vanilla, and simmer over lowest heat, stirring now and then,
    for 1 hour. Take off heat, mix in vanilla.

    Slice up or mash bananas and mix into the pudding. Turn into a
    baked and cooled pie crust. Chill. Serve.

    Variation: Put a meringue on top.
