    coconut pound cake

    Soul Food Online's Recipe
    1 c butter, softened
    2 c sugar
    5 eggs
    3 c sifted flour
    1/4 t salt
    1 c milk
    1 (3 1/2 oz) can coconut
    1 t lemon extract
    1/2 t vanilla

    Cream together butter and sugar.
    Add eggs, one at a time,
    beating well after each addition.
    Sift flour with salt.
    Add flour alternately with milk to
    creamed mixture, beating after each
    addition. Add coconut, lemon extract
    and vanilla. Pour into a greased
    and floured 10 inch tube pan. Bake
    at 350 degrees for 1 1/2 hours or
    until cake tests done.
    Cool 10 minutes,
    then remove from pan.
