Fried Potatoes with Cheese

- 5-6 large potatoes, peeled and cubed
- 2 large onions, chopped
- salt and pepper to taste
- 3T. oil
- 2t. garlic
- 3 inch chunk Velveeta, cut up
Instructions
- Cook potatoes in oil, in cast iron skillet, turning occasionally.
- Add onions, salt and pepper, continue cooking until potatoes are well browned.
- Add Velveeta and simmer about 5 minutes or until cheese is melted. Serve.
