    List of Ingredients


    • 4 large russet potaotes, boiled, peeled and cubed
    • 9 slices bacon, fried crisp and crumbled
    • 4T. butter
    • 1/2 bell pepper, chopped
    • minced garlic to taste
    • salt and pepper
    • 8 eggs, lightly beaten
    • 1c. grated cheddar cheese


    Instructions


    1. Preheat oven to 350.
    2. Melt butter in skillet, add potato cubes and bell pepper and brown slightly.
    3. Add garlic. Add salt and pepper to taste. Pour eggs over potatoes and cook until eggs form soft curds, stirring constantly.
    4. Mix in crumbled bacon. Sprinkle grated cheese over the top.
    5. Place skillet in oven or under broiler until cheese melts.
    6. Serves 6.
