List of Ingredients
- 4 large russet potaotes, boiled, peeled and cubed
- 9 slices bacon, fried crisp and crumbled
- 4T. butter
- 1/2 bell pepper, chopped
- minced garlic to taste
- salt and pepper
- 8 eggs, lightly beaten
- 1c. grated cheddar cheese
Instructions
- Preheat oven to 350.
- Melt butter in skillet, add potato cubes and bell pepper and brown slightly.
- Add garlic. Add salt and pepper to taste. Pour eggs over potatoes and cook until eggs form soft curds, stirring constantly.
- Mix in crumbled bacon. Sprinkle grated cheese over the top.
- Place skillet in oven or under broiler until cheese melts.
- Serves 6.
