    Rhinestone Cowboy Chili

    List of Ingredients

    • 1/2 lb. dry pinto beans
    • 5c. canned, peeled tomatoes
    • 1 lb. green bell peppers, seeded and coarsely chopped
    • 1 1/2 lb. onions, peeled and coarsely chopped
    • 2 garlic cloves, crushed
    • 1 1/2 T. olive oil
    • 1/2c. parsley, minced
    • 2 1/2 lb. ground beef
    • 1 lb. lean ground pork
    • 1/3c. chili powder
    • 2T. salt
    • 1 1/2 t. pepper
    • 1 1/2 t. cumin seeds


    1. Soak pinto beans overnight in cold water in a large chili pot.
    2. Cover beans with fresh cold water and simmer for 2 hours. (pouring out water and rinsing beans reduces gaseous effects.)
    3. Saute green bell peppers, onions, garlic, and parsley in olive oil. Add pork and ground beef; brown.
    4. Add spices and cook for 10 mins. Combine with beans and cook, covered , for 1 hour.
    5. Uncover and cook for 30 more minutes ( add water if needed).
    6. Makes: 4 quarts.
