    Texas Red Chili

    2 lbs. lean beef diced to 1/2" cubes
    1 cup diced onion
    1 can tomato sauce
    2 cans water
    3 poblano chiles
    6 jalapeno chiles
    10 serrano chiles
    3 T chili powder
    1 minced clove garlic or 1/2 t garlic powder
    1/2 t oregano
    1/4 t ground cumin
    1 1/2 t salt

    First, prepare chiles by cutting off stem end and splitting chile
    in two. Then with a spoon scrape out all the white membranes inside
    and all the seeds. Then rinse well under running water. Wear
    rubber gloves if your skin is sensative! Then chop the chiles
    into 1/2 inch dice.

    Combine all the ingredients in a soup pot, add water to cover and
    simmer about 2 hours, stirring occasionally.
