    List of Ingredients




    Cookies
    3 c. Gold Medal Flour
    1 1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. shortening
    1 c. sugar
    1 c. light brown sugar, packed
    2 eggs
    1 c. peanut butter
    1 tsp. vanilla

    Filling
    1 1/4 c. peanut butter
    1 c. powdered sugar
    1 c. rice crisps


    Recipe




    Cookies
    Preheat oven to 400 degrees. In mixing bowl, blend flour, baking soda, and salt. In large mixing bowl, beat shortening and sugars. Blend in eggs. Add peanut butter and vanilla. Mix well. Add flour mixture into creamed mixture. Mix well. Roll cookie dough into 1-inch balls and place 2 inches apart onto un-greased baking sheets. On half of the cookies, use palm of hand to flatten slightly. On other half, use potato masher to make an imprint. Bake for 10 minutes or until golden brown. Cool completely.

    Filling
    In a bowl, mix peanut butter and powdered sugar until well blended. Stir in rice crisps. Spread filling on bottom of cookie. Top with imprinted cookie. Bakes 36-40 sandwich cookies.
