    List of Ingredients


    • 1c. potatoes, peeled, diced
    • 1c. diced cooked ham
    • 2T. oil
    • 2T. flour
    • 1 sm. clove garlic, mashed
    • 1 1/2c. water
    • salt and pepper to taste (cayenne)


    Instructions


    1. Make a small roux by heating oil in skillet, add flour, stir over med. heat until golden brown.
    2. Remove from heat. Add onion, stirring, cook, until soft.
    3. Put skillet back over heat, add ham, potatoes, and water.
    4. When it comes to a hard boil reduce heat and cover. Cook 15-18 mins.
    5. Add salt and cayenne.
    6. Serves: 2
