    1 cup Instant Mashed Potato flakes
    1/4 cup shredded cheddar cheese
    2 Tbsp. all-purpose flour
    1/2 tsp. baking powder
    1 egg
    1 cup milk
    1/4 cup salsa (mild, medium or hot) (optional)
    1/2 cup corn (frozen or canned)
    1-2 Tbsp. margarine or butter

    Recipe




    1.) CHILD:
    Measure potato flakes, cheese, flour and baking powder. Put in medium bowl and mix well.
    2.) ADULT AND CHILD:
    In small bowl, beat egg with fork. Stir in milk and salsa. Add to potato mixture; stir just until combined. Let stand 2 to 3 minutes or until liquid is absorbed. Add corn and stir just until mixed.
    3.) ADULT:
    Melt margarine in large nonstick skillet over medium-high heat. Drop potato mixture by 1/2 cupfuls into skillet. Pat down into patties. Cook 4 to 6 minutes or until golden brown, turning once.
    Serve with extra salsa if desired.
