    Crunchy Parmesan Chicken

    • 1c. crispy rice cereal
    • 1/4c. grated Parmesan cheese
    • 1t. garlic powder
    • 1t. paprika
    • 1/2t. salt
    • 1/2t. pepper
    • 1/4c. low fat buttermilk
    • 1 lb. chicken


    Instructions


    1. Preheat oven to 350. Lightly coat a baking pan with cooking spray.

    2. Crush cereal into coarse crumbs. Combine crumbs, parmesan, garlic powder, paprika, salt and pepper in shallow dish.

    3. Pour buttermilk in different dish. Remove skin from chicken. Dip pieces in buttermilk, then into crumbs.

    4. Place chicken on baking pan, arranging the pieces so they don't touch.

    5. Bake 1 hour or until done.

    6. Each serving of 2 pieces:8g. carbohydrate 30g. protein 7g. fat 217 cal.
