Blackened Catfish

4 catfish fillets
olive oil
1/3 lb. bacon
2 teaspoons
2 teaspoonsgarlic powder
2 teaspoonsthyme
2 teaspoons white pepper
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons lemon pepper
2 teaspoons cumin or chili powder
2 teaspoons rosemary, crushed
2 teaspoons fennel seed, crushed
1 teaspoon allspice
1 teaspoon oregano
1/2 teaspoon salt
Fry bacon; retain grease (remove and save bacon for some other use). Combine all dry ingredients. Rub fillets with olive oil, then coat liberally with spice mixture. Drop in hot bacon grease and cook until a fork can easily be put through them.
