    Boiled Icing


    Source of Recipe

    2 egg whites
    3 T water
    1/2 t cream of tartar
    pinch of salt
    1/2 t vanilla
    1 C sugar

    1 Mix in a double boiler. Stir until water is boiling in double boiler. Remove from stove and beat at high speed until it will hold large peaks and spread easily. Makes enough frosting for a three layer cake. It stays soft for days.
