    Lemon Filling

    3/4 C. sugar
    2 T. cornstarch
    Dash of salt
    1 slightly beaten egg yolk
    3/4 C. water
    3 T. lemon juice

    1 tsp. grated lemon peel
    1 T. butter

    Mix sugar, cornstarch, and salt; add egg yolk, water, and lemon
    juice; cook in double boiler until thick, stirring occasionally.
    Remove from heat and add lemon peel and butter. Cool. Makes 1
    1/2 cups.
