Smoked Beef Brisket

List of Ingredients
- 4 lb. brisket
- Marinade:
- 1c. red wine vinegar
- 1c. water
- 1 sliced onion
- 2 garlic, minced
- 8 whole cloves
- 6 parsley sprigs
- 2 bay leaves
- 2 stalks celery including leaves, chopped
- 1T. gin
- 1/2t. dried thyme, rosemary, and basil
Instructions
- Marinade brisket in fridge for 48 hours. Turn every 6 hours.
- Remove 2 hours before smoking and let get to room temp.
- Smoke for 6-7 hours. Place marinade in water pan.
