    List of Ingredients


    • 16oz. frozen hash brown potatoes
    • 14 1/2oz. can stewed tomatoes
    • 4oz. Velveeta, diced


    Instructions


    1. Spray a 1 1/2 qt. microwave safe casserole dish. Place potatoes and tomatoes (undrained) in the dish and stir.
    2. Microwave, covered, on high for about 6-8 mins. Stir once during cooking.
    3. Stir in velveeta and continue cooking for another 4 mins. Stir once.
    4. Yield: 4-6 servings.
